I've noticed that too in Indian restaurants.   English tends to be  
the common denominator in India with its numerous languages.   I've  
dined in Indian restaurants in Finland and Austria and found the  
staff much more comfortable in English than in Finish or German.     
(The help in my favorite local Indian restaurant have asked me to  
come for breakfast ... call first so they know to unlock the door ...  
then come and eat with the help.   They've discovered I like Indian  
food, not Indian food cooked for Americans.)
