That's because the email list has a Reply-To header (sent to the list) set 
and your mail client is deciding other people want a copy. I promise you, 
it's not the list server adding the CC; Your client is deciding I (or 
whoever) want a second copy. If you edit out the CC line it adds before 
sending I bet only one copy goes out.
